I can't seem to see what I'm typing at all in mushclient, and I have no idea how to set it so that the echo is on, can anyone help? I don't see anywhere that this is an issue for anyone else?

What you type should show up in the command window (the small area at the bottom of the output window). Possibly you have resized that to be too small to see it.

Or do you mean, that you don't see your command echoed in the output window? There is a configuration option to turn that on and off.

When I launch mushclient, there's a very light bluish line that I suppose I'm typing in, but I can't see it if I am, not until I hit enter and it echoes back to me on the MUD. When I launch mushclient, it's rather small, so I grab the edges and stretch it down so that I can see it. Does that make sense?----------------edited add, NEVER MIND! Thank you, that's it exactly, I wasn't stretching it down far enough. Got it!

The default should be (naturally) that you can see the area you are supposed to be typing into. I can't explain why, in your case, you weren't able to.
